Eager to Accommodate
From the minute a client chooses their menu, Chef Ken and his team are already thinking of creative ways to accommodate most allergies and dietary needs. From soups to desserts, our expert chefs test a variety of recipes to create not only delicious but also visually appealing options. Chef Ken recounts “Our chefs put together amazing special diet/allergy plates during a plated meal period. The special plate presentations and components are both fully nutritional and will even look similar to what other guests at the table are eating. The guests are so appreciative of the level of service they receive, and they love telling us that nobody takes care of them like Disney does.”
Traditional meal times aren’t the only opportunity to incorporate healthy dining options. Chef Ken tells us “The biggest opportunity for incorporating healthy catering into your meeting is with a refreshment break.” He continues, “We mix healthy and protein-dense snacks with a sweet snack to give attendees the option to choose depending on their specific tastes or level of hunger. The protein-dense foods help to fight hunger in a breakout session, while sweet options provide a burst of energy to help attendees power through their afternoon.”
Chef Ken and his team are doing their part to stay on top of relevant trends in order to provide the highest level of service to our guests, with healthier food options being in higher demand than ever. “At Disney's Coronado Springs Resort once a quarter, we have all of our pastry chefs come up with new desserts, which are more plant based, while also trying to reduce sugars and dairy as much as possible. They love the challenge and I am always impressed with how much our team rises to the occasion.”
